Wedding Prep!

























It is officially TWO MONTHS until I say 'I do' and it is time to get in the best shape possible! I typically hate the whole "under pressure" weight loss. I feel like I am more inclined to do the opposite when getting in shape seems forced. Buuuuut, I'm looking at this experience as a chance to prove to myself that I CAN. And I will. Who doesn't want to feel their best on their wedding day?

My coworker and I have been working out two days a week with the AWESOME trainer, Alex Atanasov. You should definitely check out his stuff. He is such a motivation and makes you actually look forward to a workout. While workouts are great, we all know diet plays the biggest part in the equation. Combine the two together= results! Each week I will be updating you all on my progress and will be including some of my daily workout and food logs! Here we go y'all!

THURSDAY

Breakfast: Oatmeal bake (1/2 c. oats, 2 egg whites, water, 1 tbs protein powder, stevia, cinnamon and 1/3 sliced banana) + coffee with coconut milk creamer

Lunch: Salad with 5 oz salmon

Snack: Apple and  turkey slices

Dinner: Steamed kale, broccoli, and grilled 5 oz chicken

calories for the day: 1100

Favorite Things Friday!

Longest. Week. Ever.

I'm feeling super grateful that today is Friday. I can't win every week, right? This week was just, BLAH. However, today brings a lot of excitement. Mom's in town + moving time! We finally get to move into our new place this weekend and as much as I hate the pack-unpack process, I can't wait to get settled in to our new home!!



1. Bloody Mary's. Because who doesn't like the fact that you feel semi-healthy while getting a buzz? Or the fact that you can get away with having one at 10 in the morning. I'll take mine extra spicy, please.

2. Eddie Vedder-"Hard Sun." This song makes me want to go on a road trip and roll the windows down on an open highway with my feet out the window. I'm craving a long road trip.

3. Trips to the coast: The Oregon coast blows my mind. It's unlike anything else. Plus, I think the Southern Californian in me needs to feel the ocean breeze at least bi-monthly. The ocean is where I find the most peace.

4. Madalynn Swimsuit: I love a good swimsuit. And since we are getting married in Hawaii, I decided to get a sex(ier) suit as a little motivation to get my butt in the best shape possible. And by butt, I mean yes, my booty, but also my whole body! Let the lunging and squatting begin!

Sweet + Spicy Ahi Salad

Spring has officially sprung in the Pacific Northwest and my taste buds have been craving some cooler foods. I'm talking fruits, raw veggies, and fish galore! And if you love fish as much as I do, you are in luck. I have the tastiest and easiest way to cook your favorite fish. Mine just so happens to be ahi, so let's make some!

Just make sure to air out the house : )

Sweet + Spicy Ahi Salad 

*no specific measurements for this... all based off of how many are eating

Salad ideas:

Mixed greens
Green onion
Chopped red bell pepper
Trader Joes Brocoli slaw mix
Avocado

Spicy Broiled Ahi Steaks

Ingredients:
Fresh ahi steaks (as many as you are cooking for)
Olive oil (or coconut oil)

Seasonings to taste:

Sea salt
Ground pepper
Garlic powder
Cayenne pepper

Directions:

Set oven on high broil. 
Place ahi steaks directly on a baking sheet or parchment paper. 
Lightly drizzle olive oil over each side of the steak.

On the top of the ahi, sprinkle sea salt, garlic powder, ground pepper (lots n' lots), and cayenne pepper (be a little less generous with this one). 

When your oven is ready, place the ahi in the oven for about 6 minutes then take them out of the oven to cool down for a minute. Yep, that's all!

Honey Sesame Dressing
serves 2

3 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 teaspoon sesame oil
2 grinds of pepper

Directions:

Whisk together all ingredients. Warm dressing in saucepan before drizzling over salad! 

Assemble your salad, toss in the dressing, add some fresh ground pepper and place your ahi steak right on top. Voila! This goes great with a glass of white wine. : )

Crock Pot Shredded Salsa Chicken

I am on a shredded chicken kick at the moment. Shredded chicken on a tortilla, on top of a salad, or fork piles of it on its own (yep). It is so dang tasty!


Since I typically try and stay away from starches at nighttime, I loaded my shredded chicken on a yummy Mexican style salad, while my man enjoyed his in burrito form. Two of them, for that matter (darn guys like him and their fast metabolism).

Oh, and guys (and gals)- upgrade those tortillas! You CAN still have your "heartier" meals. You just have to make slight adjustments. I love brown rice tortillas or the Ezekiel spelt ones (if you are not gluten free). Please toss out those flour ones!

Unless you are in Costa Rica and they were fresh out of the oven (sigh....).

Okay, get your veggies prepped and let's make some yummy food!

Crock Pot Shredded Salsa Chicken (the easiest recipe ever)
serves 4-5

3 boneless, skinless organic chicken breast
2 C. of your favorite salsa

Directions:

Turn your crock pot on low and place chicken breasts and salsa inside with the cover on.

Cook for 4.5 hours

Take chicken out of the crock pot and shred on a cutting board using a fork. Once shredded, place chicken back in the crock pot with the salsa to coat the chicken. Once mixed together your chicken is ready to go!

Favorite Things Friday

From sunny San Diego, happy Friday to you!


We have had an unexpected extension to our trip down here and I must say, I have no complaints about that whatsoever! Here are a few things I'm loving this week. It has a lot to do with water, sun, a handsome man, wedding planning and margaritas (smiley face, smiley face).

1. Hawaiian wedding planning! Yep, we are headed to Hawaii! We are going to be doing an intimate wedding with family in Hawaii, then head back home to Oregon to have a reception with our friends and extended family! We entertained quite a few ideas on wedding plans, but everything led us right back to square one- intimate ceremony (and my request to be barefoot in the sand and non-traditional wedding dress). You can follow along on my wedding pinterest page here. And ANY unique wedding ideas or suggestions you have for our style wedding are welcomed. Bring. them. on. : )

2. Margaritas! It is basically a ritual when I get home. Sit outside with Mom and drink margaritas in the sun. I love making mine with lime juice, tequila, triple sec, stevia, and a splash of soda water.

3. Beach days with the fiance! It is something that I took for granted while I lived here, but every time I come home now, I appreciate so much. A beach day full of healthy snacks, magazines, and good company is a great day in my book!

4. Sunset runs: After a long winter of running on a treadmill, it feels great to get outside and run in some fresh air. And a sunset view doesn't suck either...
